The Most Best Quinoa Green Salad Recipes -Hey there Lacy here with A Sweet Pea Chef and I have a really tasty and healthy salad recipe to share with you today.
We’re gonna make a yummy quinoa lentil salad with a lemon vinaigrette that’s full of fiber protein nutrients yummy goodness so let’s get started. First we need to cook the lentils whichis really easy.

Just combine cup dry lentils with cups water and then bring to a boil and we’re gonna simmer covered for minutes until tender. Once they’re cooked go ahead and drain and then set aside to cool. Next we’re gonna cook the quinoa which isalso very simple. Just combine cup uncooked quinoa with cups water bring to a boil and then simmer
covered for minutes. Once all the water is absorbed fluff with a fork and then set aside to cool as well. So now we’re gonna get the kale ready.And have you ever massaged kale before?
It’s a really great way to make kale a lot more tender and easier to eat. SalaTo prep the kale remove the leaves from the┬áspine and then break the kale into bite-sized pieces. We’re gonna toss the kale with a little bit of olive oil and rub all over it massaging it until the kale reduces in volume and becomes less stiff. Trust me it’s kind of weird but it reallymakes a huge difference. So besides chopping all the other veggies with the salad the only other main thing
we have to do is to prepare the lemon vinaigrette. So in a small bowl combine the freshly squeezed
lemon juice lemon zest raw honey mustard sea salt ground black pepper olive oil and then whisk together until well
combined. To assemble the salad combine the cooked quinoa cooked lentils massaged kale and rinsed garbanzo beans diced cucumber diced carrots quartered grape tomatoes diced┬áred onion and raw sunflower seeds and we’re
gonna toss to combine. Now drizzle over a few tablespoons of the lemon vinaigrette and toss once more. To serve pour the salad into a bowl and sprinkle a few more sunflower seeds over the top. I love to make this salad in bulk because it stores great in the fridge and makes a great side or a whole meal any time you want it. I hope you love this quinoa and lentil salad bowl as much as I do.
